French Dip Slow Cooker Recipe
This easy slow cooker recipe makes a delicious French Dip sandwich at home. Tender beef, soft buns, melty cheese, and rich au jus make it the perfect comfort food.
Ingredients:
- Beef tri-tip roast
- Salt and pepper
- Olive oil
- Can beef consomme (or beef stock)
- Better Than Bouillon roasted beef base
- Worcestershire sauce
- French onion soup
- Bottle of beer (such as Sam Adams Boston Lager)
- Cloves minced garlic
- Soft buns
- Provolone cheese
- Butter
Making The French Dip In The Slow Cooker
The first step is trimming the roast and seasoning it with salt and pepper.
Next, heat a large skillet over medium-high heat and add a tablespoon of olive oil. Sear the beef on all sides, which should take less than 10 minutes. This step is optional but will add a nice color and meaty flavor to the dish.
To prepare the au jus, pour a can of beef consomme into the slow cooker. Then add two teaspoons of Better Than Bouillon roasted beef base and stir to dissolve. Add one tablespoon of Worcestershire sauce, a can of French onion soup, and the remaining beef consomme.
You can use beef stock if you don’t have beef consomme. Add a 12-ounce bottle of beer, such as a lager. The recipe recommends using Sam Adams Boston Lager. Finally, add two cloves of minced garlic and the seared beef roast. Cover and cook on low for about 6 hours until the meat is tender.
To make the French Dip sandwiches, remove the beef from the slow cooker and let it rest for 10 to 15 minutes. While the beef is resting, butter the inside of your buns and toast them on a griddle or under the broiler.
You can slice the beef against the grain or shred it with forks. Layer the roast beef on the bottom bun, top it with a couple of slices of provolone cheese, cover it with the top bun, and cut it in half. Serve with the au jus for dipping.

Instructions

- Cook on low for 6 hours.
- Remove the beef from the slow cooker and let it rest.
- Butter and toast the buns.
- Slice or shred the beef and assemble the sandwiches with provolone cheese.
